This is the Night Porter, by Jeff Hollinger from Absinthe Brasserie in San Francisco. It could very well be one of the most beautiful cocktails we have ever shaken. Just look at how the absinthe somehow separates the port wine, creating a pattern in the cocktail unlike anything we’ve ever seen before. Now, there’s a lot af absinthe in this cocktail, so it’s probably not the first absinthe cocktail to try if you are new to this legendary spirit. But if you have tried it before, and are curious of a cocktail where the absinthe is measured in a jigger rather than with a pipette, then try this exciting and elegant cocktail.
1 oz dry vermouth
0,75 oz absinthe
0,75 oz port wine
0,5 oz mezcal
Stir with ice, strain and pour.
