We thought the mix of green Chartreuse and akvavit was interesting. And it worked out really well. The slightly bitter akvavit paired with the sweet and herbal Chartreuse was perfect, and the sherry balances everything nicely and also helps taking down the alcohol by volume a bit.

1,25 oz akvavit
1 oz manzanilla sherry
0,5 oz green Chartreuse
Stir all ingredients with fresh ice and strain into a coupe.
