This one turned out so delicious. It is somehow a bit lighter compared to the original, and using saké instead of rum moves this cocktail in a much elegant Asian direction.⁠ ⁠ For us it got extra authentic as we were able yo use a bottle of saké that we bought ourselves when we were in Japan last summer. ⁠ Italian Malfy gin [https://www.malfygin.com/] has a really distinctive lemon flavour, which we wanted to showcase in a cocktail.⁠ ⁠ The Midway Fuji is made with only two ingredients in equal parts, gin and sake. It is a dry and crisp cocktail, allowing both its ingredients to shine. The citrusy Malfy gin worked so well in this one, and it contrasts so nicely to the sake.
