This is The Center of the Galaxy. At least according to Martin Cate over at Smuggler’s Cove, who created this cocktail.

Raspberries always add a certain freshness to cocktails, as well as a nice colour. It also gives this cocktail a tiki vibe, although served in regular coupes and with no pineapple or coconut whatsoever in sight.

What’s also very likable about this cocktail is that it has honey syrup as one of its ingredients. This is quite different from regular simple syrup, and has a rounder and more elegant sweetness in our opinion. In this cocktail it is also combined with demerara syrup which adds a delicious toffee taste.

If this truly is the center of the galaxy, it’s indeed a nice place to be!

The Center of the Galaxy

Recipe

Ingredients:

0,5 oz fresh lime juice
0,5 oz demerara syrup
0,5 oz honey syrup
0,5 oz raspberry liqueur
2 oz blended aged rum (we used Appleton)
a pinch of freshly ground cinnamon

Mixing:

Shake all ingredients with ice and strain into a coupe glass.
