When poured from the bottle it has an almost purple colour, but when it is mixed with other ingredients its colour changes. Part of the excitement is seeing what colour the mixed drink gets after adding the gin.⁠ ⁠ When we created this drink we thought it would end up a bit blue, but when the gin was mixed with Suze, it decided to go golden/amber instead. We recently had drinks at Dear Irving [https://www.dearirving.com/dearirving-gramercy] and one of our favourite cocktails on their current menu is the Golden Hour. It is a perfect mix of light and sweet Italicus, dry sherry, bitter Suze and refreshing Cocchi. And that salty olive oil makes the perfect edible garnish, complementing the cocktail extremely well.⁠ ⁠ We love that Dear Irving are sharing the recipes for a lot of their drinks in their Instagram feed. This desert-inspired drink combines tequila and Suze in an interesting way. There is not a lot of the Suze in the mix, and still it defines the drink quite a bit. Suze is bitter, very bitter - but nice bitter. It is also very yellow which shows also on the prepared cocktail.
